My name’s Lucas Rainer, and if there’s one thing I’ve learned in my 42 years on this planet, it’s that food is the language we all understand even if we speak it with different spices. I grew up in Asheville, North Carolina, where my grandmother’s cast-iron skillet was more sacred than Sunday service. The sizzle of cornbread hitting hot iron, the wafting aroma of stewed collard greens, and the gentle rhythm of a whisk beating eggs for morning grits these were the sounds and smells of my childhood. I didn’t realize it at the time, but I was being raised in a kitchen cathedral.

I didn’t take the straightest path into cooking. In my twenties, I was a guitarist chasing dreams in smoky bars across the South, eating greasy truck stop sandwiches and occasionally stumbling across a diner that would blow my mind with the simplest dish. That’s when the idea hit me what if I could recreate that magic, but intentionally, and share it with people beyond just a lucky few? So I traded guitar strings for apron strings and enrolled at the Culinary Institute of America in Hyde Park, New York. It felt like learning a whole new instrument sharpening a knife with the same focus I once gave to tuning a guitar.

Since then, I’ve cooked in New Orleans, Portland, and a small village in Oaxaca, where I learned that patience is the most essential ingredient in mole. I’ve messed up, too set off a fire alarm during a Valentine’s dinner rush, once confused baking soda with salt during a guest chef appearance in Boston (don’t ask). But those flops are part of the story. They keep me humble, keep me hungry.

These days, I run a little place called Ember & Thyme in Charleston, where we do wood-fired everything, but honestly, my favorite meals are still the ones I cook barefoot in my kitchen at home. I love talking shop with fellow chefs just as much as I love showing a nervous home cook how to make their first béchamel without fear. Food should bring joy, not stress.

Whether you’re a Michelin dreamer or someone just learning to boil water, I hope my journey can offer a bit of inspiration or at the very least, a good story over a shared plate. After all, we’re all just trying to feed the people we love, one meal at a time.
